Easy Peasy Vegetable Soup
Put together this healthy and delicious soup in minutes. Add cooked chicken and substitute chicken broth or add cooked beef and substitute beef broth.
Ingredients
- 1 32 ounce box vegetable broth can use chicken or beef broth if you prefer
- 1 15 ounce can diced tomatoes
- 4 medium potatoes peeled and diced
- 3 medium carrots peeled and chopped
- 2 stalks celery chopped
- 1 cup frozen or fresh corn
- 1 15 ounce can kidney or black beans (optional)
- 3 stalks kale chopped (optional)
- 1 tablespoon onion powder or 1/4 cup fresh onion if you prefer
- 1 teaspoon garlic powder or 1 clove fresh garlic, chopped
- 1 teaspoon italian seasoning
- 2 large pre-cooked chicken breasts cubed (optional)
- 2 cups pre-cooked beef use stew meat or ground beef (optional)
- salt to taste
Instructions
- Put broth and canned tomatoes in a large pot and place on stove. Heat until it simmers. Turn to low.
- If you are adding meat and/or beans, add them here.
- Add remaining ingredients and simmer until carrots and potatoes are cooked, but firm-about 10 minutes.
- Add salt if desired.
- Serve hot. Great with crusty bread or saltine crackers.
