  • 5 Tablespoons water
  • 1/2 cup short grain rice
  • 3-4 strips lemon peel
  • 1 cup water
  • 2 cups milk
  • 1 cinnamon stick
  • 1 cup sugar
  • 1 pinch salt
  • 1 Tablespoon butter diced
  • toasted sliced almonds to decorate
  • orange segments optional

Instructions
 

  • Place raisins and 5 Tablespoons of water in a saucepan and warm over medium heat. Remove from heat.
  • Place rice, lemon peel and 1 cup water in a saucepan and bring to a boil. Stir, turn to low heat, cover and simmer for 20 minutes, stirring occasionally.
  • Remove lemon peel. Add milk and cinnamon to pan, stir. Continue to cook over low heat until the milk is absorbed.
