Plantains are a member of the banana family but in East Africa they are often served as a vegetable. Fried plantains are a tasty snack.
- 3 large yellow plantains
- 1/4 inch vegetable oil
- Wash and peel the plantains. Cut into thin rounds.
- Heat 1/4 vegetable oil in a skillet until hot. This can take 4-5 minutes.
- Carefully add plantain slices and fry until golden brown on both sides-about 4-5 minutes.
- Remove plantains with a slotted spoon and place on paper towels to drain.
- Cool and enjoy!
